Baking with Umami: Milk Rolls - Fluffy Inside, Crispy Outside

Milk Rolls
10 rolls, each 120 g

Ingredients:

  • 200 g milk
  • 600 g flour (00)
  • 120 g soft butter
  • 50 g sugar
  • 15 g yeast
  • 1 egg
  • 100 g re.garum milk

  • Instructions:

    1. Knead all ingredients into a homogeneous and elastic dough.
    2. Let the dough rise at room temperature until its volume has doubled.
    3. Divide into portions and shape into rounds.
    4. Let the rolls rise again until their volume has doubled, then brush with egg and, if desired, sprinkle seeds on top.
    5. Bake at 170 °C (340 °F) for 20–30 minutes.

    The result? A wonderfully crisp crust with a fluffy and moist dough.
