Golden Tofu: A Vegan Twist on Yellow Curry Chicken

Ingredients (Serves 4):

  • 2 packs of organic tofu
  • 2 teaspoons of Veggie re.garum (Chicken re.garum if meat's okay)
  • Yellow curry paste
  • 1 glass of organic cream
  • Rice as a side dish

Instructions:

  1. Begin by preparing the tofu. Cut it into bite-sized cubes, then lightly coat the cubes in flour. In a pan, fry the tofu until it turns a beautiful, golden hue. To remove excess oil, let the fried tofu pieces rest on some kitchen paper.

  2. Dice half an onion (and feel free to add some optional vegetables of your choice). In the same pan, gently cook the onion (and veggies, if using) until they turn a glorious golden brown, releasing their sweet aroma.

  3. Now, it's time to bring everything together. Add the fried tofu to the pan with the onion and vegetables. Stir in the yellow curry paste, allowing its aromatic spices to infuse the dish.

  4. Pour in the glass of organic cream, and let it simmer gently, reducing to a lusciously creamy consistency.

  5. To take this dish to the next level, add the two spoons of Veggie (or Chicken) re.garum. This magical ingredient introduces a depth of flavor that will make your taste buds sing.
