- 2 egg yolk
- herbs, in our case chervil
- 50g of lemon juice
- 50g of Veggie Garum
- 200-300g of corn/maize oil. The more oil you add, the thicker the consistency you’ll obtain.

Combine 2 egg yolks, a handful of fresh chervil of your herbs of choice, 50g of lemon juice, and 50g of Veggie Garum.

Blend the ingredients together until well combined.

Slowly drizzle in 200-300g of corn or maize oil. The quantity of oil will affect the consistency, so add more for a thicker texture.

Continue blending until the mixture reaches a smooth and creamy consistency.

Taste and adjust the seasoning if needed.

Transfer the herb-infused mayo to a container and refrigerate until ready to use.
